Have a new Colt XSE lightweight commander. Had some trigger work done, along with a few other items. Trigger is perfect, light, crisp, no take up. I left the colt factory grips on for awhile, until I could afford some ahrends, which came yesterday.
Put them on and noticed they are thicker than the colts. Also noticed that with them, trigger was noticiably heavier and not as crisp.
Put some take off rubber kimbers on and it went back to "normal".
I'm certain that nothing is rubbing.
Does grip thickness affect how the finger presses the trigger? Or is just me?

For me with small hands yes.
I try to use thin grips as often as possible... excuse me... Slim line.

Most people with average hands I dont imagine would really feel much of a change.

It can change where you are getting your finger on the trigger, try the old grips and see where your finger is hitting the trigger and compare it to the new ones.

PS That is only my 2 cents, and thats abou all it is worth...

Try using a good didgetal trigger gauge.

Mystery solved. The right side safety is longer than most.
The grip panel was pushing it up slightly, not enough to engage, but it was rubbing.
I dremeled the grip top down to fully clear it and everything is back to normal.
